apeiron Fine Champenoise

Our Fine Champenoise traces its DNA back to the historic planted varieties in our family’s vineyard. The must and liquor used for distilling are elaborated out of a selection of our very best grapes and terroirs. The distillation process takes place at the estate.

Geology and Terroir.
Fine Champenoise’s specific identity has been brought about by the unique expression of each stratum of terroirs. The latter have been selected from the parcels of Troissy and Bouquigny. When it comes to Meunier, we have chosen soils from the Ypresian period.

Grape Variety: 100% Meunier. 

Organic Vine-growing. 
Organic certification since the 2023 harvest.
Total soil tilling since 2015. Implementation of bio-dynamic growing in 2016.
Weedkiller and synthetic substance free. Use of fermented extracts and plant infusions.  

Elaboration.
The first step takes place during the harvest. Fine is made out of the juice from the last pressing of the grapes.
We then transform this juice into wine in stainless steel vats,
along the lines of a still wine.
The month of January is one the most important stages in the production of our alcohols: this is when we commence distilling at the district still.

Maturing.
Following a double distillation, our Fine Champenoise is matured for 24 months in the same barrels used to age our wines and Ratafias.
