Chardonnay
Our Ratafia traces its DNA back to the historic planted varieties in our family’s vineyard. The must and liquor used for distilling are elaborated out of a selection of our very best grapes and terroirs. The distillation process takes place at the estate.
• Geology and Terroir.
Ratafia’s specific identity has been brought about by the unique expression of each stratum of terroirs.
The latter have been selected from the parcels of Troissy and Bouquigny.
When it comes to Chardonnay, we have chosen soils from the Ypresian and Lutetian periods.
• Grape Variety: Chardonnay must.
• Organic Vine-growing
Organic certification since the 2023 harvest.
Total soil tilling since 2015. Implementation of bio-dynamic growing in 2016.
Weedkiller and synthetic substance free. Use of fermented extracts and plant infusions.
• Elaboration.
This spirit drink is obtained by adding the flavour of a vinous alcohol, produced in-house exclusively out of must.
• Barrel-ageing.
• Tasting Notes.
Colour: shimmering, golden.
Aromas: generous.
Fruity: well ripened and acidulous: apricot, lemon.
Dried fruit: fruit pit, walnut, hazelnut, fig.
Floral: honey suckle.
Palate: full-bodied. Tasty/creamy/complex.
Flavours of pastries and confections: marzipan, mousse, caramel chew, almond paste.
• Pairing.
Pure, it is a powerful expression of its terroirs. With gastronomy, it has found a wonderful playground of flavours, for example with sheep and goat’s cheese.
