Totem
Our wine patrimony. This wine traces its DNA back to the historic planted varieties in the family’s vineyard. It is also a bridge marking the transition between Champagne Xavier Leconte and Champagne A.Leconte.
• Geology and Terroir.
Geological origin: Ypresian. Sand and sandstone, as well as layers of clay and sand. Brown limestone soil on colluvium deposits and sandy and stony clay.
• Grape Variety: 70% Meunier, 20% Pinot Noir and 10% Chardonnay.
• Organic Vine-growing.
Organic certification since the 2023 harvest.
Total soil tilling since 2015. Implementation of bio-dynamic growing in 2016.
Weedkiller and synthetic substance free. Use of fermented extracts and plant infusions.
• Pressing, winemaking, maturing.
Elaborated in stainless steel vats and oak casks. Alcoholic fermentation with indigenous yeast. Aged in cellars for at least 3 years.
• Dosage: 6 g/l.
Derived from geologically identified terroirs, Totem embodies the estate’s spirit.
• Tasting Notes.
Color: luminous / golden.
Aromas: complex / well ripened / spicy.
Summertime fruit: peach / black berry / apricot.
Palate: harmonious / tasty / solid / frank.
• Bubbles: tonic / lively / expressive.
• Serve chilled, 8-9°C.
• Pairing.
